My new 40" Sams MES is sitting up at the inlaws house ready to be used this weekend. I'm planning on starting a smoke early saturday morning but realize it needs to be seasoned first. Can anybody fill me in on what it takes to season a MES? I know they give you instructions on how to do it but I don't have my hands on it yet. I'm trying to plan what time I need to be there on Friday to have time to get it seasoned before the smoke Saturday morning.
