What do you do for veggies???

Hey folks,
What do you all like for veggie side dishes, either smoked or not smoked? Any favorites?
PS More of the white stuff is falling in NW Iowa icon_sad.gif

Obviously baked beans, scalloped potatos, and I have done zuccini, yellow squash, tomatoes and onions in one pan. All of the above were smoked.

Lets see here, smoked idaho taters are great, oh, and we really liked the twice baked a few days ago.

I guess ABTs qualify as a vegetable, I'll be doing another huge batch of those to go with my Saturday Butts and Chucky smoke, they actually are a meal in themselves with the right fillings.

Speaking of fillings, Fatties can make a full meal, too. Or the meat pie (I think I should re-post that one (lost it in the server crash).

Ah, this is a kicker: Dutches Wicked Beans, might do a batch of them in the AM, too.

We just got some white dust here today, too. Not much, just enough to remind us that spring is not here yet.

My favorite side item is corn on the cob. I just throw them in the smoker with the leaves still on and let 'em go. Once they're done, you can husk 'em, add whatever you like on it and sear it for a minute or two. MMMmm... I'm hungry now!

Lately,during summer,i have been smoking garlic,tomato,peppers and onions with remaining coals from meat smokes and pureeing and adding herbs for a condiment type thingy.

Veggies? what are veggies, heck i gave up on bread, buns and hushpuppies cause they also interfered with my meat consumption. Seriously i grill veggies more than i smoke them biggrin.gif

About the only veggies I eat are corn and green beans lol

i like corn on the cob steamed in its husk or husk it evoo and roll it around on the grates beans might be tricky tho'

A little veggies are good....a little. Meat is better!

Seriously tho' having a garden is great. Fresh picked Marconi Peppers- rub them with olive oil and grill em- so sweet!

Asparagus...same. Wow.

Spring onions (store bought, year 'round) make a nice muncher.

Vidalia onions, peeled, quartered almost all the way through with a pat of farm butter and a tooth of peeled garlic, then wrap in foil (helps if your sister-in-law's family has a farm nearby *grin* )

and the best of course is the jalapeno ABT's. Hands down the winner. Cream Cheese be darned, they count as a vegetable for me!!

I like to take a cabbage and quarter it put some salt, pepper, butter and some jalepenos on it wrap it in foil and cook until it is soft. Sometimes we add some carrots and other veggies too.

corn cob-6 green beans wrapped in bacon brn sugar-black-eyed pea's sheesh this is a endless list-grilled carrots-onions garlic-grilled taters & onions-grilled asparagas with cheese sauce-than the fresh stuff-broccle cawlflower-theres no end.

Grilled Asparagus

Take asparagus, snap off the hard ends and using the smaller bamboo skewers, make a "raft" using two skewers through however many pieces you can fit on it. Rub with EEVO, season with a little garlic salt and any kind of pepper. Grill for about 5 min each side over high heat. You can do them on the top/warming rack of grill and they'll be fine but I like my veggies a little charred so I put 'em on the lower rack closer to the heat.
People who were never asparagus fans (kids) have been converted once they taste this stuff. It is a bit of work to skewer them but I think it's worth it for something different.icon_lol.gificon_lol.gif

Like the asparagus tip Whiskey, I'll have to try that. I make it on the grill now but in a pan using EVOO, pepper, and romano. Asparagus goes great with anything.
