Venison Polish Sausage (Rerun)

I noticed my Polish sausage post had vanished along with some other things. Thought some of the new folks here may be interested. Had some venison and elk from the previous hunting season and mixed in enough pork to make 20 pounds. I used Rytek Kutas's recipe but added garlic and cayenne pepper.

Guess I missed this one 1st time around. Those look very good. I've read that recipe a few times in his book and will give it a try. thanks for posting it again.

can u recall your ratio of pork to venison, they look great old thread rehashed......

I don't recall that particular batch, but I have mixed in as much as 50/50 with a couple pounds of that being just pork fat plus the fat that was on the butt.  Good luck if you make this recipe and make sure to post pics.

thanx for the reply, i'm new to venison/pork mix, just tryin to get a fix on a good ratio.......looks great....again
