went to Sports Authority to pick up some exercising gear and saw they had the Char-Broil American Gourmet with fireside box for $60!!!

couldnt turn it down.

seasoning that sucker right now.

smoked salmon for dinner. Q-view to come

im seasoning her right now and i can see that the main chamber's lid isn't fully sealed. any suggestions on how to remedy that?
 
You will just have to look at it. Do a redneck fix. For me that usually involves a hammer.
 
salmon's on and got some beautiful TBS. i love this thing. the dampers make it so much easier to regulate the temp than on the ECB i have.
 
sorry no finish product. it was devoured before i got a chance to grab the camera. it was delicious by the way. ribs later in the week. finally get to use the morton's tender quick i bought this weekend when i cure a pork loin for a party next weekend. fatties as well

Foil seal 'round the perimeter --- I also used some wood stove 'rope' HOWEVER, I cannot find the right 'hi temp' caulk to keep it 'stuck' on my SMP.

Good luck...my buddy uses that 'unit' for our chix in comp..
 
how the hell do i clean the ashes outta this thing?!?!?!

i had an ECB for a few years and i'd just dump the charcoal pan into the garbage. i was scooping out small chunks of charcoal and ash for like 20 minutes (i only used like 2-3 chimenys of coal for the seasoning and the salmon). Shop-vac maybe but what do i do if im doing a long smoke and need to clear ashes while there are still hot coals in there.
 
most guys make a charcoal box and raise it up some to stay above the ashes as well as increase the fuel load you can put in.
 
You'll probably want to open that rain cap all the way when you're smoking....let's it breathe so much better and cuts down on the possibility of the dreaded Creosote..
