Hello to all from New Mexico. I'm a new member but have been cooking meats for a long time. I am looking forward to learning and using the resources from this forum.

Thanks for the welcome. Garlic is a passion of mine and I can't seem to get enough. The weather today is marginal, possible snow tomorrow, sort of windy, It's sort of like most places, just wait a few minutes and it will change. This weekend it was mid 60's and calm, Saturday was a great day to go flying in a hot air balloon (My business partners is a pilot).

Anither member from the Land of Enchantment, good to have you with us at the SMF. What type of smoker/grill do you use?
 
What kind of cookers?? Let me see where to begin. Currently We operate a New Braunfels Bandera, Char Griller, Char Broil Hondo Jr., And the pride of the fleet is My design, My build 4200 lb offset. It uses the trailer frame for its base and has a 4' X 8' X 3' cook chamber. I'll try to resize some photos of it and post them. My real job is in Manufacturing large steel objects. We have been compeeting for about 10 years, usually only 1 contest a year. The Rio Rancho Pork and Brew has been good to us and it is a great event.
