in some bacon drippings, i sauted a med onion diced, 3 stalks celery diced, added a link of home made brat sausage and cooked, added some diced garlic, the stems of the mushrooms diced, 6 strips of cooked bacon crumbled, and i use spice hunters chefs shake seasoning.

took the mushrooms and put on smoker for about a half hour befor stuffing. smoker was running high at around 300 deg. (was also making chicken and wanted crispy skin). poked hole in bottom of shroom to drain.

filled with mixture and topped off with mozzerella cheese and back in smoker till cheese is melted. these are excellent!!!

They look so tasty erain! I've gotta try your method. I like the idea of poking holes to let the moisture drain. Thanks for the post!

Thumbs Up. This is an old post but boy these sound good. Looks like just the thing I was lookin for. This will be on the grates the next smoke day.
Maybe for Thanksgiving weekend feed.
