My name is Lee, I live in rural SW Florida, I'm a 'retired' pro chef but new to the world of smoking. So far I've done a mess of pork, a turkey, a London broil, a bunch of chicken and most recently some seafood and my first brisket.
I've got a basic Char-Broil smoker but have a feeling I'll be upgrading before too long.
