got some roasts and burger out from this years kills and did some curing flavoring ect. some of the ground i added taco flavoring to. its pretty good.

heres some of the cut going on the snackmaster jr. wife got it for $5 at a garage sale.



and some coming off



some jerky sticks



and some strips.



vaccum sealed it in packs. i used the eastman seasonings but i do a lil glazing with steak sauce and soy mixture. never good enough.

this was my second try with ground. first time i didnt cure. it sucked. this was great cured.

ya this was jerky sticks. made 10 lbs of stuffed snack sticks earlier this winter. i love snacks.

looks good - so you reckon cureing effects the texture/flavour of ground jerky ?
Have to admit I haven't tried it american style yet, but it's all going to get tried at some stage :-)

Good looking batch of breakfast sausage too - looks like you must have hunted them down by the pic - must be easier than grinding and stuffing.
A bit like the wild haggis I suppose. So what's the season on sausage anyway ? ;-)
 
ya the ground jerky was much better cured. it retained the redish look and was much firmer. last time without cure it was like dry meatloaf and wasnt very chewy like jerky is supposed to be. this was good. ate 1/2 of a 2 lb bag in a week. had to freeze it so ide stay out of it till fishing season lol.
