I have not had the drum out in maybe 6 weeks. I now have a little more time on my hands. (last day of work was Oct 1st - more on that later) My Dad brought up some of the sauce I grew up on (Leigh's Kevil, KY and Starnes in Paducah, KY) as they are in town for the arrival of boy # 3. (not yet)

Wally World - easiest place to get a bone in full size butt (near me anyway)

Ran 11 hrs with no trouble at all and I shut it down. I am getting a lot better with this thing - but it was still only at 160. So, I foiled and will finish in the O-V-E-N. I know, let me have it. No late nighter here. But, I will add that I am going to start the brisket early tomorrow after my 5am run.

Also did two birds... they took maybe 3 hrs. No rub or brine. Just mayo on the skin. They were pretty good.

Starnes - Paducah, KY sauce (this is similar to RichTee sauce I tried once)

Leigh's - Kevil, KY sauce

Brisket for tomorrow -- never done a full one. I know better now, keep the lid CLOSED.

Update. Got tied up yesterday but the Brisket did okay. 11 hrs to 165/foil. Then 2.5 hrs in oven @ 250 to finish. I was tracking too much stuff in the house since it rained so had to bring it in. (we are getting our house ready to sell so I was cleaning otherwise)

The Drum did well going 11 hrs straight on 2/3rd of a basket. I still over adjust the ball valve at times. (called Bubba once for some thoughts, too) Tried a new probe once but that was not the issue.

No baby boy YET. (due Monday)

Here are the pics:
Pork Butt finished @ 200. This is the preference in our family. Starnes and Liegh's lightly added are the way it should be. (IMHO)


Brisket finished @ 197

I pulled what I could. (still learning of course)
