My name is Tom (smokintom). I live in central Michigan.
I smoke mostly jerky and sausage (venison). I have smoked turkey, chicken, hard boiled eggs, salt (made smokey salt). and fish.
I built my smoker. The wife wanted one of those outhouses for the yard. I decided to make it a smoker also. She was sick of looking at the old icebox in the back yard (called me a hillbilly). I bought some rough cut pine. I lined it with roof flashing. For a heat source I was using charcoal. The problem I hard was I had little control of the heat. As many of you know, when making snack stiks you raise the temp a couple of times. Also, when the wood chunks dried and caught fire, the temp spiked.
I just reworked the smoker. I got some clean oak pallets and lined the inside with oak. I dug a firebox 10 feet from the smoker and ran stovepipe to the smoker. For a heat source I'm using a small propane burner. I can control the temp much better and when I add the smoke the temp does not spike (at least it did not on the test run.
The smoker also looks pretty cool!
