OK. Photos will be posted a little later but here is what I did.

Went to Home Depot, purchased a lattice 12"x24" piece of aluminum. Created a cylinder approximately 12" tall with a diameter of ~9" (my math may be off).

Filled it with Cowboy Lump charcoal, started it using the minnion method

Well it is 2 hours later and she is stuck at 405 degrees with all the vents closed. I'm going to ride this puppy out to see how long she will stay at that temp and above 220.

And am now wondering if this is what could be used to do a high temperature brisket?

Promise I will get some photos up of the design before the night is over.
 
Hmmm...never thought about the bird. As you can see from the photo, I will have to use the lower food grate as a make shift heat damper, will probably use a clay flower pot bottom. This was a beta test for the basket.
