I was asked to smoke ribs for my bro and sis inlaw for friday. It was their 9 yr anni. The spares I got were from united Grocers $1.35lb. Nine slabs of a total weight of 38lbs. Only smoked 8 for thats all the smoker holds. The only trimming I did was that big bone. I put those in a food saver for chili or something. Pulled the memebrain and rubbed down with my own rub. Stuck them in a garbage bag and placed in the beer miester over night. I know I know when theres no keg it doubles as a refrig. Wood of choice on this smoke was hic chunks mixed with apple chips total 2 full chip boxes. Kept my temp around 225 and sprayed with apple juice every hour or so. On the last hour I sauced with strore bought sauce. To transport I placed in a igloo cooler placed a sheet of tin foil on top with a towel. Idea from the famous SMF

. We were the first ones there 5pm. About 7:30 the host decided time to eat. When I removed the lid to the cooler the aroma of the ribs filled the air and it was a beautiful thing

. The ribs were still pipeing hot. I was shocked of how hot they were (happy shocked). The meal went over with out a hitch. Here's a few pics.
 
the ribs look great ! Aint it great when everybody gets a whiff of what you cooked for them, and there eyes light up cause they know it's gonna be good.
