Due to the recent Hurricanes down here in Louisiana, there is tons of Pecan trees that are down. I have never used pecan, just hickory but I hear that they are very similar. What is the best way to go about getting some of this wood to use for smoking? Usually I just buy it from academy, in the chunks. I can figure out the size and everything, but what about the bark? Do I leave it on or take it off somehow? Also about how long do I need to let it sit before I use it? Any advice is appreciated.
