Doing a 9 lb bone in shoulder/butt tomorrow (starting early). Just got it rubbed for an overnight dry marinade. Dumb question, but should I cover my butt with saran wrap over night or just let it hang out in the fridge?
Whats up SteveO! I just put mine on a platter and then cover with plastic wrap. Good luck on your smoke tomorrow. What time are you getting up? A 9 pounder is gonna take you awhile.
Thanks for the advice Dave. Starting early tomorrow. Hope to have the butt on by 7, then back to bed for a few more winks, coffee and the sunday paper (daily ZERO plus the Seattle times). Glad to see you're still at it. Like your post today, we are just cooking this one for the fun of it and the left overs. Enjoy the late summer!
Amen to that!! I guess Saran calls theirs "cling" wrap and I can never get it to "cling" to the platter, tray or whatever the meat is on. It sure likes to cling to itself though -- I have a hell of a time getting it spread out so I can cover something with it.
