Pffft. Only 7 pounds? The last flat I smoked was 10. lol J/K Looks like a nice piece of meat. You slicing this beast? What kind of rub is that?
 
Looks great but just an FYI for the brisket to be the tenderest you should always cut a brisket across the grain.

oooolala 11.5 hours eeff scarfed down a bunch of bark oh man almost like sweet spicey jerkey ohhh and a bunch of nuggets as I was pullin it --- to tired will post a nice cheesy sub tomorrow

Did a 15.5 lb brisket last weekend to 210 degrees thought it to mushy for my taste. Fell asleep, but is was still used.
