In the smoker with a beef based and onion drip pan, I may use those juices for reheating later, It was sooo good on my last butt.

Just bought some mesquite tonight for this.



Rain forced me in for about 5 minutes.

Back on the patio and meat is at 98' and 118'.
My plan is to hit 165 and rest them. If I have to, I will foil at 165 and go to bed. That's what I love about my MES.

Man, that smoke smell good.

I got the swiss and 1000 island.
make some of your great slaw and the new yorkers call that a delight.

I call it good, did you post your pastrami rub on the other post.? guess I have to go and look.

Thanks Chef Boy, it fun to break away from butts and briskets once in awhile and expand this great hobby into more things. Its' all good.

That is Pastrami, guys. It's awesome.



A grilled sammie on carraway rye with swiss and spicy mustard and cukes with Vadialia derssing.




My buddy Jackpot watching me eat and hoping to get some, he always does.


On the patio enjoying.

I got a full 5 pounds of finished pastrami @ 8 -9 dollars a POUND = at least $40 for what, $6. Ahh my new found friend the butcher.

I'll be taking it to him to slice paper thin and give him some also.
