I made up some of SoFlaQuers finishing sauce, I'm goin to put the heat to it right now.

Looking great Solar! BTW, I'm at 4 hrs and 15 minutes for a 6.7 lb butt. I just checked the temp and I'm at 150. So I'm building a small fire in the chimney (probably about a 1/5 capacity).

I'm going to give it one more good smoking session before I foil it. The coals should be ready in 5 or 10 minutes. I'm going to add them and add some more wood chips and cover it for about an hour. At that point, I figure I'll be stalled at 150 - 160 for a while and I'll foil it at that point. I'm guessing that I'll have enough smoke on this puppy.

I'll keep you posted. and I'm going to copy this to my current thread when I upload the pics that I took.

HOLY CRAP!!! this butt came out better than I could ever imagine!! Let the photos speak for them seleves.biggrin.gif It just fell apart, I mean just fell apart, there was no pulling or anything, and the flavor............ahhhh, I got something here.biggrin.gif

I can't tell you how much I really love this site!! SMF is awesome and I couldn't do it without you guys.

I have so many people to thank, I'll give the props later, right now I'm going to eat me some pulled pork sammies!!

Thanks Pineywoods!! OMG, this has got to be the best pulled pork I've ever had, I just can't believe how well it turned out. There's a lot to be said about smoking low and slow, if you have any doubt, just put it aside and go to the temp you want to achieve. PDT_Armataz_01_36.gif

What was your total time?

Not that it's a race or anything :chuckle:

I hope that, if my second butt comes out well, that you'll be someone willing to test my process. No one else seems to want to :g:.

Started some pork butt this morning. Got a late start son had a football scrimage. About noon got the butts on only up to 148 right now gonna be along night. Threw some of the $.99 Chix quarters in about 1:30 and threw some taters in at 3:30 taters weren't quite done at 6, but tasted great with a nice smoke flavor, Oh my god the Chix was awesome. The chix was a test for the WSU game. Going to have that for our protein at the tailgate.
We have a large 30 plus group for tailgates.

Made some cole slaw with Blue Berries that turned out great, and went great with the BB BBQ sauce.

Phew indeed. A little over 2 hours per pound. Not that there's anything wrong with that :g:.

I really hope that you'll break out the Weber and see how my process works for you. No rush though. Whenever you feel like it! I need someone else to check out my findings.

PS, it's 12:15 and internal temp is starting to climb a little. It's now a little over 155. We're now at 7 hrs and 30 minutes for this 6.7 pounder.

I actually foiled earlier than I would have. It just seemed like a good time to wrap 'er up.

Great job Solar that is a tasty lookin butt. Don't let the time bother you too much just plan for it. It has taken me 24 hours on a 9.5 lb butt. And each butt is different. Two (2) butts the same weight may have different plateau times. Also you can hold a butt in a cooler for a long time. I have had them in the coller for over (8) eight hours and dtill have an internal temp of 170/180 degs. I use very thick bath towels top and bottom to insulate.
