New California Smoker

Hi Folks! What a great site! Fantastic tips, info, and lots of passion!

I just moved into a new place and am excited to get started smokin'. Yesterday, I just got a new Char-Broil American Gourmet. I know it's basically the cheapest offset smoker ever, but it's a huge step for a guy who has been using mostly homemade rigs of clay pots and (gasp!) the oven. It's basically the first smoker I've ever bought. (I had to debate between that and a ECB.)

So along with the new rig, I went and picked up some pork belly which are in two different cures for bacon, some pork loin for canadian bacon, some sausage chubs for fatties, and some ribs of course.

I can't wait! I've never heard of fatties of ABT's till this site so I'm pretty excited to try them.

Hi sea munky,welcome and brace yourself fo that is how the addiction starts and before you know it you cant go 2 days without the taste of smoke or better the smell

Welcome to the SMF I have fond memories of the Bay area. Spent 2 years at Fort Ord the only place I knew that had a government issued over cast all day. You will definately find all the help and info you will need here.

thanks everyone for the nice warm welcome! I'm looking forward to learning from everyone (and from my mistakes!) .

One thing I've learned already, you get what you pay for! As I was assembling my smoker, there were holes that wouldn't line up and some missing parts, insignificant parts, but missing nonetheless.

Welcome to SMF glad you joined us. You'll find lots of good info here and some great recipes. Congrats on the new smoker once you get it assembled and seasoned I'm sure you'll be well on your way to being as addicted to smoking as the rest of us are. No matter what smoker it is I'm sure you will find mods here to make it better. Have fun and happy smoking

Welcome to the SMF. Folks here are waiting to assist you on your journey into the smokin addiction, be forewarned however that once the journey is started there is no return much like the hotel california you can check out any time you like but you can never leave.
