Tomato Pie!

We love a nice tomato pie. One of the best uses for those fresh from the garden tomatoes

Pre-heat oven for 450. In a pie dish mix the following crust ingredients, by hand, into a dough. Flatten evenly around the pie pan. Bake for 6 mins.

Crust Ingredients:
2 C - flour
2 tspn - sugar
1/2 C - veg oil (I use evoo)
1/4 C - milk (add another tspn or two if the dough is too dry)
2 - tspn garlic salt

While the crust is baking, slice up 3 tomatoes and spread them out on paper towels to dry them some. I also dab the top of them with a paper towel.

When the crust has finished it 6 min bake, set oven temp to 400 and remove the crust from the oven. Fill the crust with layers of tomatoes, then sprinkle with a little basil and garlic salt.

Mix two cups of shredded cheese with a 1/2 cup of mayo. I use a mix of sharp cheddar and mozzarella. Spread on top of the tomato filling, then top with some thinly sliced onion. I usually sprinkle a little more cheese over the onion.

Bake for 30 min or until cheese starts to get that golden color. Let cool a bit after baking, better after it sets up a little.

me and my wife love tomatoes out of our garden and this would be one way we can enjoy them...thanks so much we will definitley try this

Interesting. Sounds and looks very good. I have one question. Does the bottom of the pie (the crust) get soggy from all the tomato juice?
 
The crust holds up great, stays nice and firm. We make these at least once a week during the tomato season

I think she just uses the eggs instead of the mayo, but will ask her later. We have a family member sick and she is on the phone with her mom right now.
As to the crust, shoot we are lazy and buy a ready made one from the store. They work great too.
 
Great idea for the fresh tomatoes I've got growing this summer!!! Love the layered idea and looks great all crusty and brown ... yum ...

thanks for the tip about the ready made crust...I love tomato basil buffalo mozerella sammies..so this has to be great....I can't wait to try it!
