What should I know about smoking beef ribs as opposed to pork ribs. I had planned on doing the 3-2-1 method. Is this ok? The weight is just over 3 lbs, using a vertical Brinkman. Plan on using some hickory and some apple.
 
That should work out fine for you. I think the 3-2-1 actually works out better for beef than pork (IMHO).

You can do a 3-2-1 but beefies don't need the same time that pork does. How do you like your steaks? That's how you figure out how long to do the ribs. I like med to medium rare, so no more than 4 to 4 1/2 hours for me. And marinading in Mojo Crillio is a must

Beef ribs are the way to go. Rub them up with some brown suger and others. Like said b-4 3-2-1 is great. Make sure you pull of all the membraine off the back. Mist them down with apple juice. And before you foil give them a good misting too. Beef ribs are killer

Thanks for the info! I think I will rub these down tonight, wrap them good and put them on tomorrow. I also think I will put on some ABTs and a fatty!!
