With all the excitement of the Fattie competition, I forgot to post Qview of my smoke that I did with the fattie... I smoked a couple racks of BB's, a bone-in pork loin and a Turkey no less. I will tell you right now that I screwed up.... trying to do a turkey ALONG with the ribs. I was trying to find a "middle temp" and ended up scorching the bottom of the ribs. Next time I do a turkey, it will be 2 or 3 and it will be ONLY turkeys so I can get the heat right. I took pics of the Fattie, ribs, and turkey but FORGOT the final turkey pic AND the loin pic(s). I swear the loin happened even though I don't have a pic of it (nervous chuckle) The loin came out good as did the turkey except for the skin...it was rubbery. (imagine that) Also, no more rub containing suger on the turkey. All it did was burn. The ribs were ok (not my best) and, well... the fattie was a masterpiece y'all! LOL!

My friend, that ain't scorched, thats just a bit of professional over-run, flavor flakes! Great lookin fatty too!

Hey CubGuy, after the fattie was done, I pulled it and wrapped it in a premade pizza dough you can buy in the can like bisquits. Smear some pizza sauce and cheese on it then wrap it around your fattie and bake in an oven for about 12 minutes or so. the pizza dough bakes up quick just like bisquits so keep an eye on it.
