I put 1½ charcoal chimmney worth of Kingford in the fire box, after playing around a bit with the vents for 30 minutes my therm on the firebox side is a hair under 250 and the them on the far right side is 210. Comments?
 
Baffle and tuning plates will bring the other side up to 230ish. Did you do any other mods or seal the unit up?

Also, Kingsford doesn't burn as hot as Lump i would make a suggestion to go to Lump Charcoal.

If you haven't done the mods with baffles in the smoke chamber you will need to. It will help even out the temp (its called tuning) Look in charcoal smokers for "smoker mods"

I have a feeling my baffle isn't large enough, I've played around with the vents a bit and placed a pan of water next to the baffle. I'm seeing 235 on the left and 210 on the right, but it is holding consistant temps for almost a hour now.

Keep the comments coming.

I plan on changing to Lump after today, and I have a feeling the Kingsford I'm using may be a little old (moisture?).
 
I think your temp problem may be with the Baffle design. Try a new design that will take the baffle from the front of the Chamber to the back. Sealing against the sides. Forcing the heat to go down and across. Then use some tuning plates to adjust the heat throughout.

Check this out and apply accordingly top your smoker.

Thanks for the advice, next week I'm going to seal up the gaps on the baffle.

I decided since I have a hot consistant temp, I might as well throw a couple of fryer chickens beer can style on her just to see how they will turn out. I set one on each side and put a remote digital therm in each one. So far both are with in 2 degrees of each other and after a hour they're both up to 115 degrees.
