fatty question

I'm new, so bear with me. these fatty things look awesome. Do you smoke them the whole time and for how long or at what temp?

You smoke them to an internal temp of 165°. Typically, the thin blue smoke is applied the whole time, but don't have to be. Cook's choice. Smoking of fatties can be done anywhere from 200° to 300°, typically right in the middle.
