My wife and daughter are up in CT so it gives me time to try out my Wally world $ 87.00 GOSM. I would like to try something simple before they come home so I have a little practice and can surprise them with my new skill.

Can someone give me a simple yet tested recipe for beer can chicken in the smoker? Should I inject or just rub? What spices or injection should I use? I am just looking for something easy for my first smoke.

I appreciate everyoneâ€[emoji]8482[/emoji]s incite and help on this forum.

Thanks,

Mike

i dont inject use a good poultry seasoning and rub under the skin stuff a little butter down its neck and whatever you like citrus or onion or jalopeno smoke it till 180* .
bout 5 hrs at 225* that'll do it and it'll be kick ***

If ya have time brine it and included all your favorite spices. Then rub and smoke. Brining is the key to killer chicken. IMO.

Brining recipe for just one small-medium chicken?

Here is a staple brine and injection recipe that I've been using since Travcoman45 shared it with me. Hope he doesn't mind me sharing ... here is the recipe. For small birds under 3#, I'd reduce the brine time to around 4-6 hours and be sure to give 'em a good rinse so it's not a salty bird you're biting into:

Poultry Brine
1 1/2 Gal Water
1/2 C salt
1/2 C Dark Brown Sugar
2 tsp Garlic Powder
2 tsp Onion Powder
2 tsp Cajun Spice
2 tsp Celerey Salt

I brine about 12 hours or upto 24 hours. Give the bird a good rinse after brining. Then dry and sprinkle with your favorite rub.

Poultry Injection Recipe
1/2 Pkg Good Seasons Italian Dressing
2 tsp Garlic Powder
2 tsp Celery Salt
2 Tbs Melted Butter (real butter)
2 C Apple Cider.

Inject into the breast, thighs and legs. Inject before brinning.
