Despite the title of the thread, this was all about the steak. I bought this melt in your mouth 2" thick rib eye steak that I got at the meat counter behind the glass. I put on a quick rub of salt, black pepper, garlic powder and some Cabela's Pecan Honey rub. For smoke, I put some apple wood and hickory shavings in a foil pouch. I also made a medium bite batch of horseradish mashed potatoes as the perfect side.
