Thanks guys but that sliced meat with the smoke ring is a flat I did awhile ago. That's my ideal for a brisket.

This time, I did a point, seared one for the first time and since it was a point, pulled it. On this one, I took a swing and I missed.

Like I said, kids (5 and 3) are brutally honest. I wasn't a fan of this smoke and they weren't either. We'll get them next time.

I'll stick with my usual for the time being. I think I need some lessons from Sumosmoke/Laurel on the searing.
