q-newbie needs help with salt-free or reduced-salt rub

to all -

if anyone has any good recipes for reduced-salt or (better yet) salt-free rubs, i'd be grateful to see them. my blood pressure is high enough as it is, and that is NO joke!

i'm looking for somethng with a good tang to it, i guess it would be in the st. louis or maybe memphis style. if anyone is familiar with durkee's st. louis style pork rub, then they know what i am looking for, but without the salt.

A good rub is just a combination of the savory and sweet spices you like most. If you do not want any salt in it, just don't add anything with it. While many people do use season salt as a key ingredient in their rub, there is no rule that says you have to use it. Here are some of the ingredients I put in mine.

all spice
Brown sugar
black pepper
old bay
a Mexican fruit spice
lemon zest
chili powder
garlic powder
onion powder
various other Mexican spices

Just play around with what is in your kitchen. Taste your rub after adding each ingredient and take notes of whether or not you liked the addition. Also take some notes on how you might change the use of the ingredient next time. Just get in the kitchen, go buck wild and have fun it.

Here's something I toss together for pork. Nothing fancy, but good and can be tweaked as needed. Add some pepper for a little more kick icon_smile.gif.

1C Paprika, 3/4C Chili Powder, 1/2C McCormick Garlic and Herb seasoning (salt free), 1/4C Brown Sugar.

Ron, My family has had a history of high blood pressure and has to stay away from sodium as well. I often use salt substitute which is potassium chloride, or lite salt, which is a potassium/ sodium mix. I can't tell any taste difference myself. Technically Potassium chloride is a salt, and possesses all chemical characteristics as sodium chloride. Most low salt diets are referring to sodium chloride only. Beware though some blood pressure medications react poorly with potassium, so check with your doctor if you use these meds. Hope this helps.

I'm type 1 diabetic and my Dr. wants me to watch sodium intake for the kidney function. I made up this variation of Emeril's Essence and found out what a wonderful rub it makes. Try it out! It's awesome on pork but works well for ribs, chicken and beef ribs.

Dave’s B.B.Q. Pork Rub

1 cup Dark Brown Sugar
1 cup Paprika
1/3 cup ground Celery Seed
2 Tbs. Granulated Garlic
1 Tbs. Mustard Powder
1/2 Tbs. White Pepper
1 tsp. Cayenne Pepper
2 tsp. Ground Thyme
½ tsp. Kosher salt (optional)

In a large,Zip-Lock type plastic combine all ingredients and shake or mix thoroughly then apply to pork shoulder roast 2 hours before beginning smoking process
