tuning a pit

Are there ant of you with an offset horiz./vert. smoker and have you tuned it for heat and even temp? I have a Tejas and have adjusted the baffel and plated it with 3/16 plate 4" below the grill and am getting appox.10 degree from end to end(the stock thermometers are right on too) with a 75-100degree upright difference. Does anyone else have this or is it just mybeing anal about it?biggrin.gif

I don't have the vertical on mine, but have seen some top builders talk about tuning withing 4 or 5 degrees on large units. I would think 10 on a smaller is not bad at all.

10 deg is a charm..I wouldn't worry about it not going to make much difference.

I would say that 10 degrees is pretty good on a small offset -- dependng upon the conditions under which you have acheived it. But don't be too worried if that varies sometimes depending on what you are cooking, wind, outside temp, etc.

Depending on how much meat you have in the middle acting as a heat sink, the temperature of the meat and other variables, it may vary from time to time. wink.gif
