all ritey now i dont know if i can wait til labor day. laurel u ruint all my plans!!!!! just kid. that looks sooo blankety blank good.... was following the throwdown with great interest as that brisket is gonna happen sooner than later so any scrap of info i pick up offa u or bob is definetly goin yo be used. again that looks awesome, and the mop, and the drippings....

Thanks to all for the kind words. I owe everything I've done to having my nose buried in the computer, reading the stuff on SMF to improve my smokes. Finally found a hobby that I absolutely love and others love the results biggrin.gif.

To those that are a bit hesitant on trying the first brisket smoke, go for it. It's really not as intimidating as it may sound. The cuts of meat are getting to be a bit pricey but with the help of this great forum, you'll have a successful 1st brisket smoke!!

Great job and great pictorial. I've smoked many a brisket and I never have seared one. My results are always good. But, I just might have to try searing one now. Looks awesome!

Amazing! I'm going to try this tomorrow. I have a nice butcher pack that I can use for this. I'll let you know how it turns out. How often did you mop?
