Ribs and Butt for the 4th

I picked up a two pack of loin ribs ($2.27lb) and a two pack of butts ($1.78lb) from Sam's today. There's only gonna be a few of us here for the 4th so I vacuum sealed one of the butts for later. I'm working from home tomorrow and I'll be smoking the butt then so I won't have to pull an all-nighter Thursday night. It's sitting in the fridge now with an unintentionally modified version of Jeff's rub. I'm planning on using SoFlaQuer's finishing sauce but I don't know if I should put it on tomorrow when I pull it or wait till Friday?

Sounds like a good plan don't forget the Qview. I usually use a little finishing sauce when I pull then more when I reheat

After sorting out some problems this morning I finally have finished pulled pork in the fridge for Friday.

My almost 7 year old helper.

It's hard to tell in that small q-view but I managed to get a smoke ring using 1 briq with each load of chips. I'm sure it would have been even better if I didn't have problems with my MES early yesterday. I ended up starting the butt on my propane grill and by the time I transferred to the MES the butt was already at 100. My MES seems to be dead after 3 uses so I had to smoke my ribs on my grill today. They came out good but would have been a lot better in the MES.

Great smokes. Food looks tasty. Its great when the little helpers come out to help.
