I'm using hickory chips, and I rubbed it with Dizzy Pig Dizzy Dust last night. I'll be spraying it with apple juice every hour. I plan on foiling it at 165 and taking it off at 200 and letting it rest. I'll be pulling it for sandwiches tonight.
Well it was definitley one of the best sandwiches I ever had. My wife and in-laws all ate 2 sandwiches each. My mother in law turned to my father in law and said "You've drug me to a lot of bbq places and I've never enjoyed it, but this is really good". And if anyone has a question on whether or not to use finishing sauce, use it. Thanks again to everyone on this site for the great advice.
