3-2-1 Ribs and smoked Taters

Well, my wife has been sick for over a week with a nasty cough and cold. This is the type of cough if she entered a room, you would get up and leave for fear of catching something. She missed a Big Bend Party Bash that somewhat involved my birthday so I had to be present even without her. Since she missed out on the ribs, I decided to make some for her today.
Picked up a two pack slab at the local grocer



a little yellow mustard to make the rub adhere better. These two had Jeff's Famous Rib Rub.



This one used MDM Rib Rub



Used my GOSM Charcoal to Propane Conversion Smoker for this one.
Ribs on for 3 hours uncovered. Alittle bit of oak and peach wood.



My MIL had given me a gift card from Wally World so I picked up a couple of these things. Pretty cool. The last thing you want to do is run out of gas. LOL



After 3 hours out the ribs come to be wrapped in aluminum foil



Time to add the potatoes too. All spiced up and ready to go. (Meowey Special Recipe)



Ribs will be left wrapped for 2 hours. Potato goes 1 hour unwrapped, then wrapped for 1 1/2 hours, finally 1/2 hour unwrapped.



After 2 hours in the foil. Look at that pull back
Back in they go for 1 hour unfoiled.



We decided to save the thicker parts of the slab for later and ate the thinner part of the ribs. Even with the little amount of the smoke I saw, you can still see a nice smoke ring in the meat.



Sunday dinner is on. And Mrs Flash is lovin it. Get better Hun, I need a fishin partner. :love:

Aww... what a man! And what ribs! Jeez... I should have take some pix of some of the ugly omletts I made yesterday, just to prove that not EVERYONE on here is perfect!
 
Yeah, I am not sure if the oak wood does that. This propane conversion does not give off smoke too easily, but then again, not much is needed to be smoking. I was wondering if Oak was more pungent than Hickory and it appears so

I am also starting to feel the thinner cuts from the slabs (I have to cut each slab apart to fit my smoker) do not need the full 3-2-1 and should be pulled in 5 to 5 1/2 hours tops. Just a thought.
 
What, no flowers! At least Texas Hunter gives flowers with his Ladies meals!

Nah, Mrs Flash has never been into flowers much, unless they are planted in the Garden. Her birthday is coming up and I need to find some Cracker Roses for her.
