Just got a New Braunfels El Dorado smoker this week off of craigslist for $40. It is an actual New Braunfels, not the new imitation version by Char-Broil. Had a little exterior rust, but overall was in pretty good shape. I hosed it down, went over the rusty spots with a wire brush, and gave it a new coat of high temp paint. Looks just like new - best $40 I ever spent.
This is my 1st brisket ever, and 1st smoke on the new smoker. It is 12 1/2 lbs. Put it on at midnight. Temp spiked a little right away to 265, but it has settled in at about 235 now. I have previously done 4 Boston Butts and some ribs on my ECB.
Got the brisket on the top grate, and a foil pan underneath it to catch the drippings. After doing some reading here, I will probably bring it to about 170 degrees and then foil it, since this is my 1st brisket.
