Butts and cheese with Q View

First off, let me echo all the other newbies comments here lately. This forum has helped me take it up another notch when it comes to smoking. Thanks guys and gals!

I have had such great success of late with smoking butts and chicken that now my neighbors bring me meat to throw on when I'm cooking. This weekend the agenda was 4 butts, 4 chickens in papaya brine, 2 racks of ribs and 4# of gouda cheese all smoked over mango wood. Here are the results.

Great job Congo! I love smoked gouga. never have smoked it myself though. Where can I get mango wood in central New York??

Mango wood?? OMG! how does that taste?? yum!!
I have to beg for that papaya brine recipe also...wow I have to echo DINGLE, where dos one get mango wood in So Cal???

Papaya brine recipe

The nice thing about living in the tropics is all the fruit that is available. As for the papaya brine I just follow Jeff's brine recipe for chicken quarters and then I mash up anywhere from a half to a whole papaya and throw it in the brine. Sometimes I even rub the bird down with papaya chunks and then add my rub.

I am gonig crazy trying to find mango wood!! I might have to ad-lib the wood part!!
But I have a chicken getting ready for that papaya brine.....
