Well plans have changed at the last minute............well not really the last minute but kinda.
( I just made it into the store too grab some ribs as they closed the doors.)
I had planned to smoke a Butt for our Sunday Nascar race party.
Well by request I am switching the smoke too ribs now.
I will be try'n Jeffs rub out, for the first time......hope everyone enjoys it !
I guess I am going with a long smoke at 220 degrees using peach and hickory for smoke.
Heck 6 hours sure seems like a long smoke for ribs !
Heck I'm new who am I to question Jeff....sorry I just want to make sure thing turn out right.

What are your thoughts on this amount of time and heat for St. Louie style ribs ???
