Last minute menue change........HELP !!!!

Well plans have changed at the last minute............well not really the last minute but kinda.
( I just made it into the store too grab some ribs as they closed the doors.)

I had planned to smoke a Butt for our Sunday Nascar race party.
Well by request I am switching the smoke too ribs now.
I will be try'n Jeffs rub out, for the first time......hope everyone enjoys it !

I guess I am going with a long smoke at 220 degrees using peach and hickory for smoke.

Heck 6 hours sure seems like a long smoke for ribs !
Heck I'm new who am I to question Jeff....sorry I just want to make sure thing turn out right.
Did I read jeff's post right ?

What are your thoughts on this amount of time and heat for St. Louie style ribs ???

I would anticipate that the ribs will be closer to 4 to 5 hours. 6 hours is quite a bit of time unless you are dealing with exceptionally meaty ribs.

I did some spares today cut St. Louis style...The racks took 4.5 hrs and the extra parts took a little over 5hrs with an averagr temp of 230 degrees. I did foil them them at 2 hrs and unfoiled them 2 hours later. Good luck!
 
Just did spare ribs this morning and to my constrenation they were sorly lacking meat they were done 3.5 hours and the shallow end where like jerky..not even good jerky! the so called meaty end was barely edible.
 
Ribs don't usually take 6 hrs....unless you like pork mush!
Depends on cooker, fat content, etc.
Cooking at 250 wouldn't hurt either.
 
Use the 3-2-1 method, works well, smoke fer 3 hours, spritz each hour, wrap an cook fer two hours, then cook the last hour ta dry em up a bit and set the color. Check with a bone, if ya grab a bone an it's loose, they er ready!
 
I'm also a BIG fan of the 3-2-1 method for spares. I've been using it for three years now and have had great success with it. Check out the method and give it a try. If it works for you, good deal. Making mods to methods and developing your own techniques is perfectly acceptable so feel free to experiment.
