Out of curiosity, do you get those markings on the fat-side of the butt by simply scoring them with a knife? I've always smoked my butts fat cap down, but wanna try it your way. biggrin.gif

Dan, those look like the most perfect ribs I've ever seen! Can I have one? I kinda over did some BB's last weekend even doing the 2-1-1 method. I am marking those times you used and will give it a try the next time it's rib time.

2 dogs, I used to worry too much about times and temps on ribs. I am still a beginner for sure, but a few successful smokes will fill your mind with ease and make things more enjoyable, and less.................technical. As it has been said here many times, you just have to learn a "feel" for the times. I do believe that every smoker is different. The times will get it done for ya, but knowing what to look for and how they feel and cook, is an art. I have experienced it once or twice, but the more I cook , seems like the easier it gets. The smoker I have makes it so easy to Q, and makes me look so good. I do alot of work, thats for sure, but I sweat the small stuff alot less than I did 2-3 months ago.

Thats whats great about this site,a little time and homework, learn your rig, and everyone is a potential pit master.

the butts took about 10 hrs give or take 30 minutes. they went on at 5:30, and came of at 3:45-4:15, rested for 2 hrs and pulled. Hey here is what a platter with 2 butts worth of work looked like! It is probably the BEST I have done to date. Maybe they like each others company in the Lang!icon_smile.gif

Ever try to pull 6 butts in a row, My back is killing me!

Two things come to mind......
One...That looks like a mad scientist experiment with all those probes and wires!
And Two... That has to be the prettiest butts I've ever seen!

Dan, everything looks great. When I have a lot of butts to pull I just pull out the KitchenAid mixers and let them do the work.

I score the butts to promote better bark, and render the fat away more efficiently! Thanks for the comments. I am up north with Pop on fathers day weekend, using this itty bitty teeny laptop. Tough for big ole clumsy fingers.
