Graduation pork fest w/ Q-view

Buddy of mine has a daughter graduating on saturday, I am gonna head north for the weekend to spend with my dad, so today is the day for the fun smoke. I am only supplying the meat for the event for a pre-arranged amount/contributionPDT_Armataz_01_18.gif .

He wants to feed 75-80 people with leftovers for himself. So last night I rubbed,scored and injected 6 butts, and put them on the pit at 5:30 am today. The will get smoked at 225-250 for9-12 hrs untill they get to 200-205, rested and pulled,and placed in foil pans for the refrigerator,and then they will reheat saturday a couple hrs before serving time.

Sposed to be 88-92 degrees today, so I'll be saving a little on the wood consumption. I will post some Q-views as the day progresses, and I have another person who wants to have ribs for dinner for company tonight after golf, so I am doing 4 racks of baby backs also, they will go into the smoke a bit later in the day, along with a couple fatties.

Doing a larger cook next weekend for a sunday grad party. That one will have 8 butts and 2 packers, and a couple fatties(all nighter).This one will be my first overnighter since the Eagle practice cook. Richtee, are ya gonna come down and help me ole buddy!icon_smile.gif

lol, my bad. i know how to golf AND fish (might as well throw hunting in too, lol), so what does that say about me? some of those lakes around golf courses have some pretty good fishing, so you can have the best of both worldsPDT_Armataz_01_18.gif

WOW that's an awesome smoke. I look forward to getting to that level of confidence and experience. Not to mention having a grown up smoker that could handle that much at one time. Can't wait to see q-view.

As for the golf/fishing thing. I often have to fish my golf balls out of water hazards. I've gotten pretty good at that. Does that count? Probably not. At least not until I figure out how to fillet a golf ball and smoke it.

hey good luck capt. better have a cooler no wait 2 coolers ready, one for the meat and the other filled with "keep me ups" haha. have fun i hope to attempt something of that size someday

I tried to post em earlier, and I had some CP problems, I think I got it handled now. Sorry for the delay, and also, last nights chat was cut short by said cp problems. To those that were there, I am sorry, I couldn't get back on to say goodnight!

OK heres some food p o rn.

The morning was calm and beautifull, I wish my freinds and SMF family in the flood strickin and tornado ravaged areas could wake up to what I did today. I feel truly lucky!

Here is the butts, with their fancy carvings about 1 hr into the smoke!

Now I know there are alot of folks who have their favorite therms and systems, I can't make up my mind. I feel like a field tester some times. I have 2 other units, but the probes are bad!

Now here is a little look just before they get their aluminum armor. they ranged from 172-180, and all got foiled at the same time.

and another look with a couple lonely racks of ribs in the corner. Them are mine, Another rack goes on at 2:30 for my goofy golfer friend who is showing up around 8 pm for them.!

When I was removing for foil, a lil piece got stuck to the grate, and I sampled it!eek.gif Oh yeah, these people are gonna get some dandy pork sammies!cool.gif

yep, I open the firebox door and start my chimney of lump in it before I fire up the lang. I have often thought about selling it. I have a good friend who works with me alot, and I may just make him an awesome deal on it.

Ouch. Get some help, Capt. (since Rich is still off-line you can pick on him, too. Ha Ha) You were pretty beat at the end in Eagle so be careful. Is the biz side taking off a tad I see?

yep it is Glen.I'll be ok, I am at home and not at some fairground with limited ammenities. I also will be going to bed right after the allnighter, cuz the folks are commin to pick it all up and pulling/slicing themselves. Thats alot less work for sure.

Gotta go pull some bitts off and the first 2 racks, and put 2 more on for the golf pro!icon_smile.gif

Butts are off and resting,cept for 2 stubborn ones, they are just about there, but here is a pic of the ribs. They turned out good, and I am taking these to dads up north.

forgot to mention we are going to crystal lake, and we hope to visit "camp crystal alke" tomorrow on .................................................. friday the 13th!
