Hi, just signed up. Have a Brinkmann Smoke-n-grill that we just bought. Second smoker we've owned. Never really did anything with the first one except for some chicken leg quarters a couple of times. Just did some leg quarters on the new one this past holiday weekend. I'm wanting to do more with it and hope to learn how. I've already signed up for Jeff's ecourse and received the first one. My biggest goal is to to be able to do ribs and some good old pork bbq, after all I am in NC! I've never really done either, so it will be a challenge. I'm even considering getting a charcoal grill for grilling rather than using the big stainless steel gas grill. Nothing like food cooked with charcoal. Plus I don't have to worry about runnning out of gas in the middle of cooking something, arggghhhh!

Welcome to the SMF gang, Brian. Glad you already signed up for the eCourse, will help you out a ton with getting your feet wet with this great hobby.

Lots of posts on both pulled pork and ribs. Check out the "Pork" section of SMF and you'll have lots to read and look at. If you have questions, throw out a thread!

Welcome to the forum. There are lots of friendly folks around here with tons of knowledge and ideas. Just browse through the threads and check out anything that catches your eye. Be sure to throw your two cents in anytime you can. Don't be so quick to write off the gas. I love charcoal too, but there's always a day that you work late and get home wanting a burger for 1. I use the gas almost as much as the charcoal.

Brian, Welcome. The SMF will have you rolling along shortly at a high level of NC quality Que. (like you said, it is expected where you live. wink.gif)

I would suggest Jeff's rub recipe as a great starting point as well. (a few $)

Hey if a blonde soccer mom from So Cal can make excellent pulled pork, I know you can, just cuz you are there!! It is required right?
You will really find everything you need to know in here, even great hockey conversations, these are difficult to have living in So Cal and all!

Thanks all...not writing off the gas grill. Wife won't let me do that with a $400 grill...lol It has it's advatanges and it has served us well. But it seems to taste better. Plus I hate the flare ups and the cleaning the gas grill. I just need to learn to make time for grilling and not a wham bam thing as it is with the gas.
