looking at smokehouses as a business

we are trying to help develop an intown commercial area in savannah georgia.. somewhat artsy, food based, diverse, affordable, green ...all the right buzz words for socially conscious and economically viable. on one parcel of the development (next to a former grocery store) we have several cinder block buildings that just seem to cry out for "smokehouses". but i know absolutely nothing about smokehouses but we have wanted to do a local butcher shiop and this just seems like a good fit. are there any "consultants" out there that might be willing to help us get this started?

Hi, I had a rib joint for 8 years. I would do some research in your local market to see what the demand, competition, and demographics look like. Spend much time doing that.

The food bussiness is a tough one, many hours, and lots of work. The failure rate is bad and you need all the ammunition you can get to make it. I have a sister inlaw that works in the bussiness in Utah. I may be starting one myself.
