Mornin folks. Just put on my first butts. Got a 2 pack at Sams about 18.5 pounds, rubbed em down last night and just got em on. Will be doing up some beans, fatties and ABT's a little later in the day. Smoking the butts with Hickory and Apple. This is my second ever smoke but with all of the information here I'm sure it will be just fine. Patience grasshopper.....

Did my first but a few weeks ago and it was awesome. You said the right word, "patience." I did mine at 225-230 and it took all day, and it was 10 hrs of cook time plus another 1 for resting. It was testing at times but in the end it was well worth the effort. The family thought so anyway.

It is a little testing trying to get the temp just right....running anywheres from 228-235 but If I can keep it right there I should be fine.
 
Its not an exact temp type thing, especially with butts, they have alot of fudge factor with them, so if it gets up to 250-260, not a terrible thing, just try to keep it in the 220-250 range for the majority of the cook time, and you'll be just fine! More important than the constant temp is, try to avoid huge temp differences from opening the door too often to peek, or forgeting to check and it gets over 300. Once its in the foil, its even less babysitting.

Good to know....It has been hovering in the low 230's.....at what point do I pull them to wrap in foil? I am mopping with pineapple juice every hour.
 
well, personally, I would slow down on that mop, cuz its way sweet, and that butts gonna get blacker than most. Maybe mix it with some apple juice or a little water. I usually foil mine at 170-175 cuz I like thicker bark, but my guess is that you may have some thick/darker bark at 165-170. The foiling is a matter of preference. The longer you wait, the more bark you will usually have. Some foil em at 160, or right after plateau, others go late like me, and a few don't foil at all till cooler rest time.
 
OK Here we are at the 6 hour point. Had to switch propane tanks as the first ran out but had a spare standing by. The upper one is at 151 degrees and the lower one is at 146. Q-View is attached.The first is the upper the second the lower. A batch of Butch's Beans is on the top rack. Smoker temp has been pretty steady around 230.

OK the plateau is completed and the tems are starting to rise again. I will pull at 160 degrees and then foil until 180. The fatties are ready to go on and the ABT's are being stuffed. More q-view soon.
 
Hang in there. I am trying to get better at having a fatty or an ABT around to hold myself over.

Butts and ABTs look AWESOME!!! The japs you used looked pretty good size so props on that too! You're in for some tasty treats tonight!
 
Here is the second butt, I just opened it up. Still warm from the cooler. Pulled out the bone nice and clean. The dog has been drooling all day. Come to think of it, so have I!!! Turned out great.
