Thank you all for the feedback.
I must be doin somethin right.
Also, I have a remote thermo, so I can still be outside and monitor the temps inside. Too nice of a day to sit and stare at the oven door and thermo display. Just set the alarm and wait......Truly amazing how many beers there are in between foiling, cooler time and pullin the butt.
Jeez I really love this process!!!!!!
