Wild Turkeys

Ok guys had a really good couple days and got my 2 spring turkeys.. One was about 19lb, the other was 23. Plan on making pepperettes out of the legs and thighs, jerky out of the breasts of one.. and the other I want too smoke as just breasts.. anyone have any good brine recipes for turkey breasts?? approximate time of optimal brining? Plan on using high mountain for my jerky and pepperettes. want homemade brine for the breast.

I can control heat at 250 very well in my smoker for extended periods.. and plan on using apple, pear or cherry for the wood. Will this be a good combo?

Congrats on your hunting results, those fresh turkeys will taste really good brined and smoked.

I've yet to try it but have passed it around to many as it looks tasty, and simple.

Gratz on the birds. My friends are talking about turkey hunting in upcoming seasons.I think it is time for me to step up to plate and buy a shotgun and join em.

Even if I don't get a gun or go help after the smoked turkey we had the other day I am sure they will be coming to me with whatever they get.

Here is a brine recipe for chicken I got from the book "Legends of Texas BBQ"

8 cups water
1/2 cup sea salt
2 tablespoon hot sauce (I used lots more then that)
1 tablespoon ground pepper
1 tbs poultry seasoning
1 can beer

That is the amount of ingredients needed for 3-4 pound chicken.
