These are some chic wings that I generously dusted with Smittyâ€™s rub. Using hickory, apple, and mesquite, I smoked them for 1 hr. at 450Âº, then dropped it down to 350Âº. I got some real crispy wings with these temps. I noticed that the wings closest to the door got crispy sooner than the other pieces. The door must be radiating heat towards the rackâ€™s edge.
