Stuffed Pork Loin

I wanted to try the pork loin stuffed with sauerkraut so we bought a whole loin and planned to try two different stuffings.
The first is stuffed with fried kraut. The second is stuffed with cubed potatoes and cheese.

The pork was done perfectly and tasted great. The potatoes never got cooked. I think you need to precook them.

Dinner was:
Stuffed pork loin (a little of each)
Asparagus and morels sautéed in butter
Strawberries with whipped cream
Sparkling apple cider mead

Here's a trick - have your significant other liveout of state for 6 months. The twang will return to your kraut if the wind blows!
