First attempt at a fattie

Made up a couple of fatties today. Did a beef and a sausage. Stuffed them both with onions, green peppers cheese and some other spices. Tried Dutch's baked beans too. It all turned out really good. Talk about great tasting beans. Not sure how long the fatties took. Kinda lost track of time. Pulled them both at about 170. Beans were on for 3 hrs. That part I know.
 
Looks really good. Now you're hooked, right?

As for the fatty's , next time you might want to pull them at 160 and see what if any difference there is.

Wow does that look good, and a nice smoke ring too! Congratulation bud, you have done well. I've never done a fatty but I want to. I was thinkin' jus' finely diced jalapenos, sweet vidalia onion and some bacon. Thick cut, peppered kind. Juicy cooked not crispy.

Any suggestions for a newbie to a fattie?

Rivet, now I'm from the school of "there is no such thing as too much bacon" but if you wrap your fatty in bacon, using bacon as a filler may be overkill. Trade the bacon room for cheese! I'm also an alumni of the "there is no such thing as too much cheese" school!
