Chuck Roast, Fatty, ABTs, & Morels = A good day

Did a chuck roast some ABTs a fatty and a few morels We found yesterday All was excellent. The chuck was amazing, Took a little longer then I expected, The chuck plateued for almost 3 hours at 140 and made my total cook time 8 hours, so I didn't get to rest it as long as I wanted but it was still good. Does anybody know how to shorten plateau times?

Bottom line - there isn't a way to shorten the plateau time. It's the natural process of the meat fibers breaking down to create the tender/shreddable results that everyone loves. This is the time to crack open a beer (or drink of choice) and watch the TBS chug out the top of the smoker. biggrin.gif

By the way - your pics looked great!!! Nice looking grub, especially the roast!

I typically shorten my plateau times with captain morgan. Doesn't actually shorten the time, but takes my mind off the wait!

What a great smoke! I haven't had morels for longer than I care to remember. Keep posting those pics!

What did you do to prep the Chuck Roast? Did you marinate it or rub it?? Foil it??
