we decided to have some fajitas tonight and this how i did them
I used about a 3lb london that I marinated for about 5hrs.
Marinade:
1/2c virgin olive oil
1/2c soy sauce
1/4c wort. sauce
1tbl cummin
1tbl cilantro
salt and peper to taste
Geilled on both sides for 2 mins them put on the smoker using mesq. for the smoke. I smoked the onions and jalapinos with the london cuz i wanted some smoke flavor with the veggies

After about 4 hours with internal temp at 145 i took off and wraped in tin foil and a towel for 30 mins. Sliced and served

I fried up some green and red pepers with a bit of garlic than mixed all the veggies together. I then served as shown.
REAL good dinner.
