i have always been into cooking on the grill and now iam getting into smoking and i just bought a binkmann square smoker and just learning how to use it and what rubs to use. any sugestions would be great.

Hello Scott! Welcome to SMF! Sign up for the 5 day ecourse as one suggestion...it's FREE :{) And another- as a beginner, Jeff's rub and sauce recipes will save you more money in trying to come up with your own than you'd think possible. I have my own, but I won't sell them of course LOL! Get Jeff's and if nothing else they are a GREAT starting point from which you can progress as your experience progresses.

You can take that advice to the bank :{)

Like Richtee said, look all over this forum, good stuff everywhere you turn. Some things are just simple things you should do to turn yourself into a smoking machine. My biggest challenge was to learn how to slow it down. Low and slow. This forum will give you inspiration for the next smoke. Good luck with the future smokes.

i just signed up for the 5 day course now if i can just get my smoker hot enough , the gauge in the door only reads 175 and i have tryed vents open and closed and multipul combinations, i use a combination of charlco and wood chunks hickory today and after 6 hours still not done so now to finish on the grill.

Top vent all the way open. And the thermo on the thing is most likely junk. You wanna get 2 digitals, or one with a dual probe setup.

The bottom vents control the heat... wide open if too cool. You have a bit of learning ahead, but DO NOT GET DISCOURAGED!

Go with what Rich said, especially the part about not getting discouraged! Once you get the feel for regulating the heat on your smoker, you've won half the battle!
