I have one digital thermometer, that I use to check the meat, where do I put the one to monitor the internal smoker temperature. Do I just hang it in there? or what? can it be touching the metal rack?

The metal has nothing ELECTRICAL to do with it, you just won't get the air temp at grill level like that. Make sure your probe tip...the last inch and a half...is out the other side of it.
 
You can also push it through a cork and leave the tip exposed as explaned by Richtee, I save my old wine bottle corks for things like that, not that I have many...
