Hello everyone. I just found your forums and am very excited about it!

I have had a New Braunfels Silver Smoker for around 10 years now. (I think it's a silver and It's at least 10 years. :)) The smoker is still in pretty good shape and I figured out how to use it pretty well using lots of trial and error over the first few years I had it.

I had to make a lot of mental and cooking adjustments based on all the things I read on the web or in smoking books. Longer cook times, more fire (I usually use charcoal and wood chunks), and more temperature. I used aluminum foil to keep the firebox heat from burning the meat close to it, I moved the food around to get even cooking, and lots of charcoal. Finally, after 10+ years on my own, your forums showed me how I can mod my smoker to get the performance I always expected out of it on a more consistent basis.

I need to move the smoke stack lower, baffle the firebox entry, use tuning plates and seal up the non-wanted openings. Heck - I'm even going to add more wheels to that smoker! Fortunately you guys have tips, pictures and directions on how to do all these things. Thanks so much. I'm very excited about this because while my food came out great before - it's going to be a more pleasant experience now. (I don't know how to express it. It was always pleasant but it will somehow be even better now. I feel weird saying it but it's like Christmas and I'm getting a new smoker under the tree.
